When I create a standard extruded part in Inventor and then change it to a sheet metal part I cannot change the sheet metal thickness from what it was in the original extruded part.

Is the option for changing the thickness greyed out, or do you get an error message when you make the change? With your current process you "set" the sheet metal rule to match your thickness to allow it to unfold. It will NOT change your "standard" part thickness based on that..
